Black Bean Chipotle Ranch Hummus with Fresh Avocado Pico

  • - 15 ounces black beans drained and rinsed
  • - 2 garlic cloves
  • - Chipotle Ranch Dressing

  • - 4-6 tbsp avocado oil as needed for desired consistency
  • - 4 Tbsp fresh lime juice
  • - ½ tsp dried chipotle spice
  • - Salt and Pepper To Taste
  • - Fresh Avocado Pico
  • - 2 medium vine-ripened tomatoes, cored and diced
  • - 1 jalapeño, or more to taste, seeded and minced
  • - 1/4 cup minced yellow onion
  • - 1 Tbsp. minced cilantro, optional
  • - 2 Tbsp. Fresh lemon or lime juice
  • - 1/2 tsp. sea salt, or to taste
  • - 1 ripe, Fresh Avocados, seeded, peeled and diced
  • - Tortilla chips


Instructions For Pico Combine the tomatoes, onions, jalapeño, cilantro (if using) and lime juice. Taste and season with sea salt to taste. Gently fold diced avocado into the tomato mixture and serve. Instructions for Hummus To a food processor or blender, add all ingredients except avocado oil and blend until ingredients are smooth. While the blender is running slowly add in avocado oil till desired consistency. Transfer to a serving dish and top with fresh pico, a little drizzle of avocado oil and enjoy! Keep in the refrigerator in a storage container for up to a week.
