Avocado Oil Brownies

Ingredients:

2 cups coconut palm sugar

3/4 cup all-purpose flour

2/3 cup cocoa powder

1/2 cup dark chocolate chips

3/4 tsp sea salt

1/2 tsp baking soda

2 large eggs

1/2 cup Plant junkie Avocado Oil

2 Tbsp water

1/2 tsp vanilla

Instructions

1. Preheat the oven to 325°F. Lightly spray an 9x9 baking dish and line it with parchment paper.

2. In a medium bowl, sift together the sugar, flour, cocoa powder, baking powder, and salt. Add in the eggs, Plant Junkie Avocado Oil, water, and vanilla. Stir until just combined and in chocolate chips and stir till all the dry ingredients are incorporated.

3. Pour the batter into the prepared pan (it'll be thick - that's ok) and use a spatula to smooth the top. Top with additional chocolate chunks if desired. Bake for 30 to 35 minutes, or until a toothpick comes out with only a few crumbs attached (note: it's better to pull the brownies out early than to leave them in too long). Cool completely before slicing.
