Ingredients:

1/2 cup apple juice

1/4 cup Plant Junkie Avocado Oil

1 tsp diced garlic

1 Tbsp dijon mustard

1/2 tsp salt

2 Tbsp rice wine vinegar

Salad Ingredients:

1 apple of choice sliced

1 small, sweet potato diced and roasted

1 bag kale salad mix

1/4 cup Toasted Pumpkin Seeds

1/4 cup Toasted Pecan halves

1/4 cup dried cranberries

Instructions

1.To make dressing combine all ingredients in to a small mason jar and shake until combined. In a medium bowl add kale salad mixture and drizzle dressing over salad and toss to coat with dressing. Divide into 4 bowls and top with remaining ingredients.
