INGREDIENTS
- 1/2 cup apple juice
- 1/4 cup Plant Junkie Organic Avocado Oil
- 1 tsp diced garlic
- 1 Tbsp dijon mustard
- 1/2 tsp salt
- 2 Tbsp rice wine vinegar
- Salad Ingredients:
- 1 apple of choice
- 1 small, sweet potato diced and roasted
- 1 bag kale salad mix
- 1/4 cup toasted pumpkin seeds
- 1/4 cup toasted pecan halves
- 1/4 cup dried cranberries
DIRECTIONS

To make dressing combine all ingredients in to a small mason jar and shake until combined. In a medium bowl add kale salad mixture and drizzle dressing over salad and toss to coat with dressing. Divide into 4 bowls and top with remaining ingredients.
