- •1/2 cup apple juice
- •
- •1 tsp diced garlic
- •1 Tbsp dijon mustard
- •1/2 tsp salt
- •2 Tbsp rice wine vinegar
- •Salad Ingredients:
- •1 apple of choice
- •1 small, sweet potato diced and roasted
- •1 bag kale salad mix
- •1/4 cup toasted pumpkin seeds
- •1/4 cup toasted pecan halves
- •1/4 cup dried cranberries
Instructions
- 1. To make dressing combine all ingredients in to a small mason jar and shake until combined. In a medium bowl add kale salad mixture and drizzle dressing over salad and toss to coat with dressing. Divide into 4 bowls and top with remaining ingredients.
