Avocado Oil Brownies
INGREDIENTS
- 2 cups coconut palm sugar
- 3/4 cup all-purpose flour
- 2/3 cup cocoa powder
- 1/2 cup dark chocolate chips
- 3/4 tsp sea salt
- 1/2 tsp baking soda
- 2 large eggs
- 1/2 cup Plant Junkie Organic Avocado Oil
- 2 Tbsp water
- 1/2 tsp vanilla

Preheat the oven to 325°F. Lightly spray a 9x9-inch baking dish and line it with parchment paper.

In a medium bowl, sift together the sugar, flour, cocoa powder, baking powder, and salt.

Add the eggs, Plant Junkie Avocado Oil, water, and vanilla to the dry ingredients.

Stir until just combined. Then, fold in the chocolate chips, mixing until all the dry ingredients are incorporated.

Pour the batter into the prepared pan (it will be thick, but that's okay) and use a spatula to smooth the top. Add extra chocolate chunks on top if desired.

Bake for 30 to 35 minutes, or until a toothpick comes out with only a few crumbs attached. (Note: It's better to pull the brownies out a bit early than to overbake them.)
