- •6 medium Roma tomatoes, diced
- •1 cup white onion, chopped
- •1 large or 2 small jalapeños, seeded and chopped
- •3 medium avocados, semi-firm but ripe, peeled, cored and diced
- •
- •3 Tbsp fresh lime juice
- •1 clove garlic, finely minced
- •1/2 tsp salt (to taste as desired)
- •1/4 tsp freshly ground black pepper
- •1/2 cup loosely packed cilantro leaves, chopped
Instructions
- 1. In a mixing bowl, combine the onion, diced tomatoes, jalapeños, and avocados.
- 2. In a separate small bowl, whisk together Plant Junkie Organic Avocado Oil, lime juice, garlic, salt, and pepper until well blended.
- 3. Pour the dressing over the avocado mixture, then add the cilantro.
- 4. Gently toss everything together to evenly coat.
- 5. Serve with tortilla chips or as a topping for Mexican entrees.
