- •1 Tbsp fresh lemon juice
- •1 garlic clove, minced
- •1 tsp Italian seasoning
- •kosher salt and pepper, to taste
- •1 pound persian cucumbers, sliced
- •1 large avocado, or 2 medium, diced
- •1 small red onion, thinly sliced
- •2 Tbsp chopped chives
- •2 Tbsp minced parsley
- •1/2 cup feta cheese, crumbled
Instructions
- 1. In a bowl, combine Plant Junkie Organic Avocado Oil, vinegar, garlic, lemon juice, and seasonings. Stir to mix well.
- 2. In a separate mixing bowl, add the sliced cucumbers, avocado, red onion, and parsley. Stir to combine.
