Ingredients

  • 1 Tbsp apple cider vinegar
  • 1 Tbsp fresh lemon juice
  • 1 garlic clove, minced
  • 1 tsp Italian seasoning
  • kosher salt and pepper, to taste
  • 1 pound persian cucumbers, sliced
  • 1 large avocado, or 2 medium, diced
  • 1 small red onion, thinly sliced
  • 2 Tbsp chopped chives
  • 2 Tbsp minced parsley
  • 1/2 cup feta cheese, crumbled

Instructions

  1. 1. In a bowl, combine Plant Junkie Organic Avocado Oil, vinegar, garlic, lemon juice, and seasonings. Stir to mix well.
  2. 2. In a separate mixing bowl, add the sliced cucumbers, avocado, red onion, and parsley. Stir to combine.
  3. 3. Top with crumbled cheese and serve immediately.
