INGREDIENTS
- 3 Tbsp Plant Junkie Organic Avocado Oil
- 1 Tbsp apple cider vinegar
- 1 Tbsp fresh lemon juice
- 1 garlic clove, minced
- 1 tsp Italian seasoning
- kosher salt and pepper, to taste
- 1 pound persian cucumbers, sliced
- 1 large avocado, or 2 medium, diced
- 1 small red onion, thinly sliced
- 2 Tbsp chopped chives
- 2 Tbsp minced parsley
- 1/2 cup feta cheese, crumbled

In a bowl, combine Plant Junkie Organic Avocado Oil, vinegar, garlic, lemon juice, and seasonings. Stir to mix well.
